First check into the Members Only guest house at Linne Calodo. This three-bedroom, two-bathroom home at the top of the hill is a perfect retreat for the first two nights in Paso Robles.
Linne Calodo is most known for Rhône-variety blends which helped to fuel the rise of Paso Robles as an epicenter of Syrah, Grenache, and other classic Rhône grapes. They like to say their wines are an experience forever influenced by a factor beyond their control: Mother Nature. Enjoy a private vineyard tour and tasting with the winemaker where the wines are not contrived, not forced, and intriguingly unexpected.
Start the day off on the right foot with a visit to L’Aventure Winery. Stephan Asseo developed into an artisan winemaker of fastidious craftsmanship and gained a reputation as a maverick vigneron while in his native France. However, his true desire was to be more innovative than AOC law would allow. In 1996, he discovered Paso Robles, and the result of that love affair was L’Aventure Winery.
Start your L’Aventure with a glass of Thienot Champagne and tour the ground and caves and conclude with a seated tasting in Stephan’s private library located in the caves. Enjoy a beautiful French-style lunch with Chloé Asseo Fabre who oversees the operation of the winery.
After lunch, head to Tin City to plunder your way through the many tasting rooms, innovative craft breweries, and artisanal distilleries. Originally named for the tin siding on many of its buildings, Tin City has grown over the years to become a bustling hub of creativity and entrepreneurship. In addition to the many wine tasting rooms you can visit, you can also take home some artisanal cheese from Central Coast Creamery, or perhaps try some sheep’s milk ice cream from Negranti Creamery!
Who wants to spend this night at home? You do! Your group will have a special dinner in residence curated by Chef Justin Kingsley Hall, Executive Chef of The Hatch, and Della’s in Paso Robles. Chef Justin will bring along a few winemaker friends to entertain you and keep your glasses full while he cooks dinner for you and your guests in the comfort of your home away from home.
With gratitude to Linne Calodo, you’ll move on and check into the stunning Allegretto Vineyard Resort for a two-night stay. Framed by the rolling landscapes and picturesque vineyards of Paso Robles, Allegretto Vineyard Resort by Ayres is a getaway unlike any other. From the Tuscan-style architecture and museum-caliber artwork to the locally farmed and foraged delights at Cello Ristorante & Bar, this 20-acre hideaway is a celebration of life lived joyfully, harmoniously and with intention.
En route to the resort, you’ll stop by Booker Vineyard. There you’ll get the best seats in the house at the Terrace Tasting, a lovely patio oasis tucked into a hillside vineyard. At Booker, the purpose is simple: to thoughtfully farm and craft world-class wines that leave a small footprint but make a big impact. The 100-acre certified organic estate vineyard produces a myriad of wines with an emphasis on Rhône varietals. Sample the newest releases and some of the most sought-after wines Booker has to offer.
Next, head over to Niner Wine Estates. Niner is a family-owned estate winery that aspires to make great wine from two distinct vineyard sites in the Central Coast of California. The flagship blend is Fog Catcher, and they focus on estate grown Cabernet Sauvignon, Pinot Noir, and Chardonnay. Your visit to Niner includes a tasting and lunch, which is fortunate since the restaurant at Niner Winery was awarded one of America’s Best Winery Restaurants by Wine & Food Magazine.
Finish out the afternoon at the beautiful Epoch Estate Wines property. The Armstrongs (owners of Epoch) are geologists – who better to understand terroir, unique soils, and temperature swings? Which is why they kept coming back to Paso Robles and purchased their first vineyard in 2004. The Epoch portfolio is diverse with Rhône, Zinfandel, Tempranillo, and as of recently, a few Bordeaux varietals. Enjoy these wonderful wines in an Elevated Tasting in their historic tasting room atop York Mountain.
